The house

Cooked over fire, written by the season

Gurmanai began in a former grain cellar beneath Vilnius Old Town, with one hearth and a short list of growers we still work with today.

The menu follows the Baltic year: smoked eel and beetroot in the cold months, sorrel, birch sap and young lamb as the light returns. Nothing travels far, and nothing is on the plate without reason.

Dinner is unhurried. Ten to fourteen courses, a room of twenty-eight seats, and a kitchen you can see from every table.

A table is held for fifteen minutes.
